Harvest Time
Your first ears should be ready for harvest from early July through late October, depending on when you planted and which variety you chose. Most varieties take about 75 days from planting, though our cool nights may extend this slightly compared to hotter regions.
Check for ripeness by looking at the silks first - they'll turn brown and dry when the ears are ready. Gently pull back part of the husk to check the kernels, which should be plump and milky. When you puncture a kernel with your fingernail, it should release a sweet, milky juice. If the juice is clear and watery, wait a few more days.
Harvest by grasping the ear firmly and twisting it downward and away from the stalk with a sharp pull. The ear should break free cleanly. Corn is best eaten within hours of picking since the sugars start converting to starch immediately after harvest, though our cool nights do slow this process somewhat.
As our first frost approaches in late October, harvest all remaining ears even if they're not quite ready. Corn won't ripen further once picked, but those late ears can still be good for cooking or processing.
