Our extreme summer heat and 245-day growing season might seem challenging for cool-season crops like peas, but timing is everything here. Plant during our cooler months, and these hardy plants will thrive in temperatures that would stress warm-season crops. The key is working with our Desert Southwest climate, not against it.
Transplanting Outdoors
Transplanting peas works in the Desert Southwest from mid-February through mid-March, though most gardeners prefer direct sowing since peas don't love root disturbance. If you're starting with transplants, choose the earliest part of this window when soil temperatures are still cool.
Harden off your transplants gradually over a week β start with just morning sun, then increase exposure daily. Our intense desert sun can shock tender seedlings even in late winter. For shell peas, harvest when pods are plump and you can see the round outline of peas inside, but before the pods turn yellow or start to dry. The pods should still be bright green and snap crisply when bent. For snap peas, pick when pods are full but peas inside are still small β they'll be sweet and tender.
Harvest in the morning when pods are cool and crisp, using both hands to avoid pulling on the vine. Pick every day or two during peak season to keep plants producing. Regular harvesting signals the plant to keep flowering rather than going to seed, extending your harvest window.
