While our mild summers and cool nights might seem challenging for a long-season crop like butternut squash, our 193-day growing season offers plenty of time to produce a successful harvest. With a little attention to timing and the right techniques, you can easily grow delicious butternut squash right here in Zone 7B.
Starting Seeds Indoors
Starting butternut squash indoors gives you a head start, especially with our sometimes slow-to-warm spring soils. You'll want to start your seeds indoors in early to late April, about three weeks before you plan to transplant them outside. Use seed trays or small pots filled with a good seed-starting mix.
Keep the soil consistently moist, and provide warmth (a heat mat works wonders) and plenty of light (a grow light is ideal, especially with our often overcast spring days). Bottom watering helps prevent damping-off disease. While starting indoors is an option, direct sowing typically works just fine for butternut squash here.
Transplanting Outdoors
If you started your butternut squash indoors, aim to transplant them outdoors late April through mid May, after the last expected frost. Before transplanting, harden off your seedlings by gradually exposing them to outdoor conditions for about a week. This helps them adjust to the sun, wind, and temperature changes.
When transplanting, space your butternut squash plants 36-60 inches apart, as they need plenty of room to sprawl. Keep an eye on the weather forecast and protect your young transplants from any unexpected late frosts with row covers.
Direct Sowing

Keep the soil consistently moist until the seeds germinate. Since butternut squash needs a long growing season, direct sowing is best done closer to late April or May, especially if you want a larger harvest.
Watering Butternut Squash in Zone 7B (Pacific Northwest)
Butternut squash needs consistent watering, especially during its active growth phase. During our dry summer months, give your plants a good, deep watering about once or twice a week, providing roughly 1-2 inches of water each time. The "finger test" is a reliable way to check: stick your finger into the soil about 2 inches deep; if it feels dry, it's time to water.
Water at the base of the plant to avoid wetting the leaves, which can encourage powdery mildew in our sometimes humid conditions. As the fruits mature, gradually reduce watering to improve their storage quality.
Signs of underwatering include wilting leaves and stunted growth. Overwatering, on the other hand, can lead to root rot and yellowing leaves. The best indicators of ripeness are a uniformly tan skin with no green streaks and a hard shell that resists scratching with your fingernail. The stem should also be dry and corky.
To harvest, use a sharp knife or pruners to cut the squash from the vine, leaving about 2-3 inches of stem attached. Avoid pulling or twisting the squash, as this can damage the vine.
Before storing your butternut squash, cure it in a warm, dry place for about two weeks. This helps harden the skin and improve its storage life. As our first frost approaches in late October, harvest any remaining squash, even if they're not fully ripe. Smaller, less mature squash can still be used in cooking.

Squash Vine Borer
- What it looks like: Sudden wilting of vines, often near the base of the plant. Small holes in the stem with sawdust-like frass (borer excrement) nearby.
- What causes it: Squash vine borers are moth larvae that tunnel into the stems of squash plants. They are more prevalent in areas with hotter summers.
- How to fix/prevent it: Wrap the base of the stems with aluminum foil or netting to prevent the moths from laying eggs. Inspect stems regularly for holes and frass. If you find evidence of borers, carefully slit the stem open and remove the larvae. Mound soil over the cut stem to encourage rooting.
Powdery Mildew
- What it looks like: White or grayish powdery coating on leaves, stems, and sometimes fruit. Leaves curl, yellow, and die. Reduces plant vigor.
- What causes it: Various fungi that thrive in warm days, cool nights, and moderate humidity. Dry leaf surfaces actually favor it (unlike most fungi).
- How to fix/prevent it: Improve air circulation through spacing and pruning. Remove affected leaves. Neem oil or potassium bicarbonate sprays help. Milk spray (1 part milk to 9 parts water) is surprisingly effective. Plant resistant varieties.
Squash Bugs
- What it looks like: Gray-brown shield-shaped bugs on leaf undersides. Bronze egg clusters on leaves. Wilting leaves that turn brown and crispy.
- What causes it: Sap-sucking insects that inject toxin while feeding. Adults overwinter in garden debris and emerge in spring.
- How to fix/prevent it: Hand-pick adults and crush egg clusters. Board traps (adults hide under boards at night β flip and destroy in morning). Neem oil spray. Remove plant debris in fall. Companion plant with nasturtiums.
Poor Pollination
- What it looks like: Fruit is small, misshapen, or fails to develop. Partially pollinated fruit develops unevenly. Flowers bloom but fall off.
