Starting Seeds Indoors
Start your pepper seeds indoors during mid-February through mid-March, about 8 weeks before your planned transplant date. Peppers are notoriously slow to germinate and grow, so this early start is essential for getting mature fruit before our first frost in mid-October.
Set up seed trays in a warm spot β peppers need soil temperatures around 70-80Β°F to germinate well. A heat mat helps tremendously in our still-chilly February and March weather. Bottom watering works best for pepper seedlings; it keeps the soil evenly moist without waterlogging the tiny roots.
Place your trays under grow lights or in the brightest south-facing window you have. Peppers need strong light from the moment they emerge, or they'll become leggy and weak. With our moderate-to-late spring start here in the Midwest, you'll have plenty of time to grow stocky, robust transplants.
Transplanting Outdoors
Transplant your pepper seedlings outdoors during late April through late May, when nighttime temperatures consistently stay above 50Β°F. Peppers are extremely sensitive to cold β even a brief dip into the 40s can stunt their growth for weeks.
Harden off your seedlings gradually over one week before transplanting. Start with just an hour outdoors in a protected spot, then increase their time outside daily. Our variable spring weather means you might need to bring them back inside if an unexpected cold spell hits.
Space plants 18-24 inches apart in your sunniest spot. Look for dark green, stocky plants with thick stems when selecting transplants. Avoid any plants already showing flowers or small fruits β these have been stressed and won't produce as well as younger, more vigorous plants.
Watering Pepper in Zone 7A (Midwest)
Peppers need consistent moisture but aren't as thirsty as tomatoes. In our moderate-to-humid Midwest climate with 30-40 inches of annual rainfall, you'll often get help from summer showers, but don't rely entirely on rain during our occasional heat spells.
Water deeply once or twice per week, giving plants about 1-1.5 inches total. Check soil moisture by sticking your finger 2 inches down β if it's dry at that depth, it's time to water. During our typical 86Β°F summer days, peppers may need water every 2-3 days, especially in clay soil that tends to either flood or turn brick-hard.
Water at the base of plants rather than overhead, especially during our humid summer months when wet foliage can encourage disease. Apply 2-3 inches of mulch around plants to retain moisture and keep roots cool during heat spells. As fruits begin to ripen, reduce watering slightly β this concentrates flavors and prevents fruits from becoming watery.
Signs of underwatering include wilting during the day and slow fruit development. Overwatering shows up as yellowing leaves and poor fruit set β our clay soil makes this especially common during wet spells when drainage is poor.
Supporting Your Pepper
Most pepper varieties grow as compact bushes and don't need elaborate support systems. However, plants loaded with large fruits can benefit from simple staking to prevent branches from breaking under the weight, especially during summer storms.
Install a 3-4 foot stake next to each plant at transplanting time. Tie the main stem loosely to the stake using soft cloth strips or plant ties. As the plant grows, you may need to add one or two more ties higher up the stem.
For particularly heavy-fruited varieties, consider using small tomato cages instead of stakes. The cage provides support on all sides, which helps during our occasional severe weather and strong summer thunderstorms.
Pruning & Maintaining Pepper
Pinch off the first flowers that appear on young pepper plants to encourage stronger root development. This seems counterproductive, but removing early blooms helps plants establish better and ultimately produce more fruit throughout the season.
Remove any small fruits that form before the plant reaches 12 inches tall. Also pinch off any flowers or fruits that develop where branches meet the main stem β these "sucker fruits" rarely develop well and drain energy from more productive growth.
As our first frost approaches in mid-October, stop fertilizing and reduce watering to encourage remaining fruits to ripen. You can also pinch new flowers that appear after early September, since they won't have time to develop into mature fruits before frost.

Expect your first peppers during late June through mid-August, about 65 days after transplanting. You can harvest peppers green for a crisp, slightly bitter flavor, or wait for them to develop their full color for maximum sweetness and vitamin content.
Ripe peppers feel firm but give slightly when gently squeezed, and they've developed their mature color β red, yellow, orange, or purple depending on variety. The stem end should come away easily when you twist and pull gently, or use clean scissors to avoid damaging the plant.
Regular harvesting encourages continued production, so check plants every few days once fruiting begins. During our productive summer months, a single plant can produce 15-20 large peppers or dozens of smaller varieties.
As first frost approaches in mid-October, harvest all remaining fruits regardless of maturity. Green peppers will keep in the refrigerator for weeks, while mature peppers can be frozen or dried. Partially colored fruits will often continue ripening indoors if placed in a warm, bright spot.
Common Problems in Zone 7A (Midwest)
Blossom Drop Healthy-looking plants that produce flowers but no fruit, with blossoms falling off shortly after opening. Small fruits may form but then yellow and drop.
This frustrates many Midwest gardeners, but it's usually temperature stress.
