Our short 173-day growing season and unpredictable spring weather might seem challenging for root crops, but beets are remarkably frost-hardy and quick to mature. With their 55-day timeline, you can easily fit multiple plantings into our growing season, and their tolerance for our alkaline soil makes them more forgiving than many vegetables in Mountain gardens.
Transplanting Outdoors
While transplanting is possible, beets rarely perform their best when moved from containers to the garden. Their long taproots resent disturbance, often resulting in misshapen or stunted roots that never reach their full potential.
If you do choose to transplant, start seeds indoors 4-6 weeks before your late March through mid-April transplant window. Harden off seedlings gradually over a week, protecting them from our intense UV and temperature swings that are common during Mountain spring weather. Space transplants 3-4 inches apart and expect some transplant shock.
For best results in our high altitude conditions, skip transplanting entirely and direct sow instead. Your beets will thank you with straighter, more vigorous root development.
Direct Sowing
Direct sowing is absolutely the way to go with beets in our Mountain climate. You have a generous window from early April through early August, allowing for succession plantings every 2-3 weeks through summer. Wait until soil temperatures reach at least 50°F consistently—our alkaline Mountain soils warm slowly in spring but hold that warmth well once established.
Prepare your beds by working in compost to improve drainage and soften our often-clayey soil. Beet seeds are actually seed clusters, so expect multiple seedlings from each "seed." Sow ½ inch deep and space seeds 2 inches apart initially—you'll thin to 3-4 inches as seedlings emerge.
Our low humidity means seeds won't rot in the ground, but keep the soil consistently moist until germination, which takes 7-14 days in our cool spring conditions. Once established, these hardy roots handle our temperature swings and cool nights beautifully.

At 55 days from planting, check for beet shoulders poking above the soil surface—they're ready when roots reach 1.5-3 inches in diameter.
Don't wait too long to harvest, as our intense Mountain sun can quickly turn tender beets woody and tough. Gently brush away soil to check size rather than pulling blindly. The sweet spot is when they're golf ball to tennis ball sized—any larger and they lose that tender texture that makes homegrown beets special.
Harvest by grasping the greens close to the root and pulling straight up, or use a garden fork to loosen soil first if your Mountain clay is particularly stubborn. Cut greens 1-2 inches above the root if you plan to store the beets, but don't waste those nutritious tops—they're excellent sautéed or added fresh to salads.
