Overview
Beets are perfectly suited for our Mountain West gardens, thriving in our intense sunlight while staying sweet and tender through cool summer nights. The combination of high altitude sun exposure and natural temperature swings creates beets with exceptional flavor - earthy and sweet without the woody texture you often get in hotter climates. Both the roots and greens are kitchen workhorses, and there's real satisfaction in pulling these jewel-toned vegetables from our alkaline soil.
Our short 96-day growing season might seem limiting, but beets are actually ideal for high altitude gardening. They handle our late spring cold snaps without missing a beat and mature quickly enough to give you multiple harvests before September's first frost arrives. The key is working with our timing - start when soil warms up and you'll have fresh beets all summer long.
Transplanting Outdoors
While you technically can transplant beet seedlings from early May through early June, this isn't the recommended approach for Mountain gardeners. Beets develop a taproot early, and disturbing it during transplanting often leads to stunted, oddly-shaped roots that never reach their full potential in our short season.
If you do choose to transplant, harden off seedlings gradually over a full week since they'll face intense UV exposure and potentially cold nights. Space them 3-4 inches apart and expect some transplant shock that delays maturity. Given our 96-day season, this setback can push harvest uncomfortably close to first frost.
The reality is that beets transplant so poorly that direct sowing is almost always your better bet in the Mountain West. Save your transplant energy for crops that truly benefit from the head start.
Direct Sowing
Direct sowing is absolutely the way to go with beets in our region, and you have a generous window from mid-May through late June to get seeds in the ground. Wait until soil temperature reaches at least 50Β°F consistently - our alkaline soil warms slower than neutral soil, so don't rush this even when air temperatures look promising.
Work compost into your planting area to improve drainage and add organic matter to our naturally mineral-heavy soil. Plant seeds Β½ inch deep and 3-4 inches apart, knowing that beet "seeds" are actually clusters that often produce multiple seedlings. The intense Mountain sun helps with germination, but keep soil consistently moist during the 7-14 day germination period.
Succession plant every 2-3 weeks through late June for continuous harvests. This timing works perfectly with our growing season, giving you tender beets from mid-July right up until September frost threatens. Our cool nights actually improve beet flavor, so later plantings often taste even better than early ones.
Watering Beet in Zone 3A (Mountain West)
Consistent moisture is absolutely critical for beets in our dry Mountain climate - irregular watering creates those white rings inside the roots (called zoning) that make them tough and unpalatable. With only 10-20 inches of annual rainfall, you'll be doing most of the watering yourself throughout our moderate summer heat.
Aim for about 1 inch of water per week, checking soil moisture with the finger test down to 2 inches deep. In our low humidity environment, surface soil dries quickly but deeper moisture lasts longer, so don't be fooled by dry-looking tops. Water at the base of plants rather than overhead - our dry air means foliar diseases aren't a major concern, but ground-level watering is more efficient and reduces evaporation.
Watch for signs of water stress: wilted leaves during our 85Β°F afternoon heat (normal), but also leaves that stay wilted into cool evening hours (needs water). Overwatering shows up as splitting roots or mushy spots, though this is less common in our well-draining alkaline soils.
A thin layer of organic mulch helps retain soil moisture without blocking our intense sun from warming the soil. Grass clippings or shredded leaves work well and break down to improve our mineral-heavy soil over time.

Harvest Time
Your first beets will be ready from mid-July through mid-September, typically 55 days after sowing in our Mountain conditions. Look for root tops pushing up through the soil surface - harvest when they reach 1.5-3 inches in diameter for the best texture and flavor.
Check beet size by gently brushing soil away from the crown rather than pulling. The intense UV exposure at our altitude can cause larger beets to become woody quickly, so don't let them get much bigger than 3 inches. Twist off the greens about an inch above the root to prevent bleeding, and don't forget those greens are excellent eating - harvest them throughout the season when they're young and tender.
Unlike tomatoes or peppers, beets don't continue ripening once harvested, so timing matters. Our cool nights actually concentrate sugars, making late-season beets particularly sweet. As September's first frost approaches, harvest remaining beets regardless of size - they'll store well in cool, humid conditions even if they're on the small side.
Plan your final harvest before hard frost hits. Light frost actually improves beet flavor, but hard freeze will damage the roots. In our short season, this usually means getting everything out by early September.
Common Problems in Zone 3A (Mountain West)
Poor Germination Seeds fail to sprout or germination is patchy and slow, leaving gaps in your rows. This happens when soil temperature stays below 50Β°F or when our alkaline soil forms a crust that seedlings can't push through. Our intense UV can also dry out the soil surface faster than seeds can establish.
Work compost into planting areas to improve soil structure and keep the surface from crusting. Plant when soil has warmed consistently and maintain even moisture during the germination period. A light covering of fine compost over seeds helps prevent crusting while still allowing our strong sunlight to warm the soil.
Leaf Miners Small white trails zigzag through beet leaves, created by tiny larvae tunneling between leaf surfaces. These pests thrive in our low humidity conditions and can quickly damage the greens you're counting on for harvest. Heavy infestations weaken plants and reduce root development.
Remove affected leaves immediately and dispose in trash, not compost. Floating row covers during early growth stages prevent adult flies from laying eggs. Our beneficial insect population builds slowly at high altitude, so hand removal of damaged leaves is often your best defense in the short term.
Cercospora Leaf Spot Circular brown spots with gray centers appear on older leaves, eventually causing them to yellow and drop. While less common in our dry climate, this fungal disease can still appear during periods of high humidity or overhead watering, especially when nights stay unusually warm.
Water at soil level rather than on leaves, and ensure good air circulation by proper spacing. Remove affected leaves promptly and avoid working around wet plants. Our naturally low humidity is actually an advantage here - this disease struggles in our typical Mountain conditions.
