You'll get both tender roots and nutritious greens from one crop, making beets an efficient choice for our shorter growing season. The natural sugars that concentrate in beet roots during our cool summer nights simply can't be replicated in hot, humid climates.
While our 153-day growing season might seem limiting, beets actually thrive in our Mountain conditions. Our alkaline soil suits them well, and the moderate summer temperatures prevent the bitter, woody roots that plague gardeners in hotter regions. The key is timing your sowings right β something that becomes second nature once you understand our unique spring and fall patterns.
Transplanting Outdoors
Beets transplant poorly due to their sensitive taproot system, so direct sowing is strongly recommended over transplanting. If you do choose to transplant, your window runs from early April through early May, but expect lower success rates compared to direct-sown plants.
When transplanting is absolutely necessary, harden off your seedlings gradually over a full week before moving them outside permanently. Our intense high-altitude sun can shock transplants that haven't been properly acclimated. Space transplants 3-4 inches apart and plant them at the same depth they were growing in their containers.
Be prepared for late spring weather swings during transplant time in the Mountains. Even hardy beet transplants can struggle with the dramatic temperature shifts between our warm days and cold nights in April and May.
Direct Sowing
Direct sowing is your best bet for beets in the Mountain West, with a generous planting window from mid-April through late July. This extended season lets you make succession plantings every 2-3 weeks for continuous harvests right through early October.
Wait until soil temperature reaches at least 40Β°F for germination, though 50Β°F is ideal. In our alkaline Mountain soils, work in some compost before planting to improve drainage and add organic matter. Plant beet seeds Β½ inch deep and space them 3-4 inches apart β each "seed" is actually a cluster that may produce multiple seedlings, so thin to the strongest plant if needed.
Our moderate summer temperatures and intense sun create perfect conditions for steady beet growth. Plant your last succession planting in mid to late July to ensure harvest before our first frost in early October.
Watering Beet in Zone 6A (Mountain West)
Beets need consistent, moderate moisture throughout their growing season β about 1-1.5 inches per week in our dry Mountain climate. In our low-humidity environment with only 10-20 inches of annual rainfall, you'll need to supplement regularly to prevent stress that causes woody, bitter roots.
Check soil moisture by inserting your finger 2 inches deep near the plants. If it's dry at that depth, it's time to water deeply. Water at the base of plants rather than overhead, since our low humidity means foliage dries quickly but deep watering is more critical than in humid climates. Inconsistent watering creates those white rings inside beet roots called "zoning" β a common problem when gardeners wait too long between waterings.
During our peak summer months when afternoon temperatures reach 85Β°F, you may need to water twice weekly. However, our cool nights help retain soil moisture better than in hotter climates. Early morning watering works best, allowing plants to take up moisture before the intense midday sun hits.
Apply 2-3 inches of organic mulch around plants to retain moisture in our dry air, but keep mulch away from the crown where the root top emerges. This helps prevent both moisture loss and the temperature swings that stress beet roots in our variable Mountain weather.

Harvest Time
Your first beets will be ready for harvest from mid-June through early October, typically 55 days after direct sowing. Look for root tops pushing above the soil surface β harvest when they're 1.5-3 inches in diameter for the best tender, sweet flavor.
Harvest beets while they're still relatively small. In our intense Mountain sun, beets can size up quickly, but larger roots become woody and lose their sweetness. Gently brush soil away from the root top to check size, then pull the entire plant by grasping the greens close to the root and lifting straight up.
Don't forget that beet greens are a bonus harvest β pick outer leaves when they're 4-6 inches long throughout the growing season. The greens are most tender when young and provide excellent nutrition while the roots continue developing.
As early October approaches and first frost threatens, harvest all remaining beets regardless of size. Unlike some root crops, beets don't improve after a frost and should be pulled before temperatures drop below 30Β°F. Store harvested beets in the refrigerator with tops removed, leaving about an inch of stem to prevent bleeding.

Leaf Miners These create distinctive white, squiggly tunnels through beet leaves as larvae feed between leaf surfaces. You'll see the actual trails where they've eaten, plus small white or yellow eggs on leaf undersides.

Remove affected leaves immediately and destroy them β don't compost. Cover plants with lightweight row cover during peak adult fly activity in late spring and early summer. Beneficial insects that control leaf miners appreciate diverse plantings, so avoid large monocultures of beets.
Cercospora Leaf Spot Purple or brown spots with gray centers appear on leaves, eventually causing them to yellow and drop. This fungal disease spreads rapidly in humid conditions, though our low Mountain humidity actually helps prevent it compared to other regions.
Poor air circulation and overhead watering increase risk, especially during our brief periods of higher humidity in late summer. Stressed plants are more susceptible.
Space plants properly for good airflow and water at soil level rather than on leaves. In severe cases, remove affected foliage and consider applying organic fungicide. Choose resistant varieties if this becomes a recurring problem in your garden.
