Butternut squash is a fantastic addition to any Desert Southwest garden. Its sweet, nutty flavor shines in everything from soups to roasted vegetable medleys. Plus, the satisfaction of harvesting your own winter squash after our long growing season is hard to beat.
Our extreme heat and alkaline soil can present challenges, but with careful timing and attention to watering, you can absolutely succeed with butternut squash. Our 313-day growing season gives you plenty of opportunity to get it right.
Starting Seeds Indoors
Starting butternut squash indoors in the Desert Southwest isn't always necessary, but it can give you a jump start on the season. If you want to get a head start, aim to sow seeds indoors from late January through mid February, about three weeks before you plan to transplant. Use seed trays with a good seed-starting mix, and keep them in a warm location with plenty of light β a sunny windowsill or under grow lights works well.
Remember to water from the bottom to encourage strong root growth and prevent damping off. Given our very-early spring character here, indoor starting is only beneficial if you're trying to squeeze in an extra-early harvest.
Transplanting Outdoors
Transplant your butternut squash seedlings outdoors from mid February through mid March. Before transplanting, harden them off by gradually exposing them to outdoor conditions for about a week. This helps them adjust to the intense Desert Southwest sun and temperature swings.
Space your plants 36-60 inches apart to allow for ample growth. Be mindful of late cold snaps that can happen this time of year, and be ready to cover your seedlings if a frost is predicted.
Direct Sowing
Direct sowing is the recommended method for growing butternut squash in our region, as it avoids transplant shock and allows the plant to establish a strong root system. Sow seeds directly into the garden from mid February through late August. Choose a sunny spot with well-draining soil.
Butternut squash needs soil temperatures of at least 60Β°F for germination, so waiting until the soil has warmed up a bit is key. Plant seeds 1 inch deep and space them 36-60 inches apart. Even though it's a long-season crop, direct sowing works great for us, unlike shorter-season zones where indoor starting is a must.
Watering Butternut Squash in Zone 9B (Desert Southwest)
Butternut squash needs consistent moisture, especially during its active growing phase, but it's not drought-tolerant. In our Desert Southwest climate, this means paying close attention to your watering schedule. During the hot summer months, you'll likely need to water deeply two to three times per week, providing about 1-2 inches of water each time.
Use the finger test to check soil moisture β if the top two inches of soil are dry, it's time to water. Water at the base of the plant to avoid wetting the leaves, which can encourage fungal diseases in our arid climate. As the fruits mature, gradually reduce watering to improve their storage quality.
Signs of underwatering include wilting leaves and stunted growth. Overwatering can lead to root rot, indicated by yellowing leaves and a mushy stem base. A good layer of mulch around your plants helps retain moisture and regulate soil temperature, but avoid placing it directly against the stem to prevent rot.

In the Desert Southwest, you can expect your first butternut squash harvest from late May through mid December, depending on when you planted. The squash is ready to harvest when the skin turns a uniform tan color with no green streaks remaining. The shell should be hard, and the stem should be dry and corky.
Cut the squash from the vine, leaving about 2-3 inches of stem attached. This helps prevent rot during storage. Butternut squash won't ripen off the vine, so be sure to wait until they're fully mature before harvesting.
As our first frost approaches around mid- December, harvest any remaining squash, even if they're not quite fully ripe. These can still be used, though their flavor and storage life may be slightly reduced. After harvesting, cure the squash in a warm, dry place for about two weeks to further harden the skin and improve their storage quality.
Common Problems in Zone 9B (Desert Southwest)
Here are some common problems you might encounter growing butternut squash in the Desert Southwest:
Squash Vine Borer
- What it looks like: Sudden wilting of vines, often with small holes near the base of the plant and sawdust-like frass (borer excrement).
- What causes it: Larvae of a moth that bore into the stems of squash plants. The dry heat doesn't deter them.
- How to fix/prevent it: Wrap the base of the stems with aluminum foil or pantyhose to prevent borers from entering. Check stems regularly for frass and, if found, carefully slit the stem open and remove the borer. Mound soil over the cut area to encourage rooting.
Powdery Mildew
- What it looks like: White or grayish powdery coating on leaves, stems, and sometimes fruit. Leaves curl, yellow, and die. Reduces plant vigor.
- What causes it: Various fungi that thrive in warm days, cool nights, and moderate humidity. Dry leaf surfaces actually favor it (unlike most fungi).
- How to fix/prevent it: Improve air circulation through spacing and pruning. Remove affected leaves. Neem oil or potassium bicarbonate sprays help. Milk spray (1 part milk to 9 parts water) is surprisingly effective. Plant resistant varieties.
Squash Bugs
- What it looks like: Gray-brown shield-shaped bugs on leaf undersides. Bronze egg clusters on leaves. Wilting leaves that turn brown and crispy.
- What causes it: Sap-sucking insects that inject toxin while feeding. Adults overwinter in garden debris and emerge in spring.
- How to fix/prevent it: Hand-pick adults and crush egg clusters. Board traps (adults hide under boards at night β flip and destroy in morning). Neem oil spray. Remove plant debris in fall. Companion plant with nasturtiums.
Poor Pollination
- What it looks like: Fruit is small, misshapen, or fails to develop. Partially pollinated fruit develops unevenly. Flowers bloom but fall off.
- What causes it: Insufficient pollinator visits, weather too hot or cold for pollination, or timing issues (male/female flowers don't overlap).
- How to fix/prevent it: Plant pollinator-attracting flowers nearby. Hand-pollinate with a small brush. Avoid pesticides during flowering. Plant in blocks. Provide water source for pollinators.
Desert Southwest Specific Challenges: The extreme heat can stress plants, making them more susceptible to pests and diseases. Our arid humidity means powdery mildew can still occur, even with dry air. The monsoon rainfall can lead to fungal issues if air circulation is poor. Water scarcity requires careful irrigation practices.
